    Plum Bread

    Recipe Introduction

    This became a holiday favorite from the first bite! I have become "known" the world round with this wonderful bread!

    List of Ingredients

    2 C. Flour
    1 t. B. Soda
    1 t. Cinnamon
    1/2 t. Nutmeg
    1/2 t. Salt
    1 1/2 C. Sugar
    3 Eggs
    1 C. Veg.Oil
    2 small jars PLUM baby food
    1 C. chopped Pecans

    TOPPING;
    1/2 C. sugar
    1/4 C. evaporated milk
    1 t. vanilla
    1/4 C. Butter
    1/8 t. baking soda

    Recipe

    Mix dry ingredients together and put into lrg. mixing bowl.
    Make a well in the center. Add the eggs, oil, plum baby food and pecans and mix well. Pour into 2 medium size greased and floured loaf pans. Bake at 325' for about 45 min. or done.
    After removing from oven, prick holes w/fork all over the tops of the hot bread. Mix the topping ingred. in small saucepan and bring to a boil, stirring for 3 minutes.
    Pour over the tops and of bread-letting it soak in and flow down the sides in the pans. Cool in the pans on wire racks. Reove from pans when cooled completely by loosening the sides first.

    ***I bake this in the mini bread loaf pans and give out at Christmas.*** (adjust baking time as needed)

    ***It has become almost impossible to find the plum baby food now, I don't know if they stopped making it or what. So, now I use prune baby food or if I can find it, I get a can of plums in the fruit section and put in blender till smooth and use that.***
