    Mexican Shredded Beef

    List of Ingredients


    1 Beef Roast (any size)
    1 Medium Onion, chopped
    2 Cloves Garlic, minced
    1/2 Cup Beef Broth
    1 Can (4 oz) Diced Green Chiles
    2 tsp Cumin
    1 tsp Chili Powder
    1/2 tsp Ground Coriander
    Salt & Pepper, to taste
    2 Tbs Lime Juice




    Cut up roast into about six big chunks. Combine roast in crock-pot with onion, garlic, beef broth, green chiles and spices – reserving the lime juice. Cover and cook on Low for 5 – 6 hours or until you can break the beef apart with a wooden spoon. When shredded, stir in lime juice. Strain when serving – use it to make tacos, burritos, or even serve over rice.
