    Boneless Fried Chicken w/ Spinach Salad

    1/8 cup chopped fresh rosemary

    1/8 cup chopped fresh thyme

    3 garlic cloves, finely chopped

    salt

    2 boneless chicken breasts, with skin

    4 tbsp EV olive oil

    1 1/2 tsp white wine vinegar

    1/4 tsp dijon mustard

    3 oz baby spinach (about 4 cups)

    1/8 cup crumbled goat cheese

    1/4 cup toasted crumbled walnuts

    Recipe



    In small bowl, combine rosemary, thyme, garlic and 1 tsp salt.

    In large skillet, heat 2 tbsp EV olive oil over med-high heat. Place chicken skin side down. Cook 7 minutes, turn and cook 4 minutes more.

    In large bowl, whisk remaining 2 tbsp EV olive oil, vinegar, mustard, and 1/8 tsp salt. Add the spinach and toss. Top with cheese and nuts. Serve with Chicken.
