    Asian Bow-Tie and Shrimp Salad

    List of Ingredients




    1/2 cup peanut oil
    1/3 cup reduced sodium soy sauce
    1/3 cup rice vinegar
    1 tablespoon sugar
    1 tablespoon sesame oil
    1/2 teaspoon dried crushed red pepper
    12 oz shrimp - peeled, deveined, cooked
    2 red bell peppers - thin strips (I like roasted peppers)
    2 large broccoli stalks, break into small florets, slice stems thinly
    12 oz farfalle (bow-tie pasta)
    8 green onions

    Recipe



    Whisk first six ingredients to blend. Season with salt and pepper.

    Pour half of dressing into a large bowl, add shrimp and bell peppers, marinate 15 minutes.

    Cook broccoli stems and florets al dente in a pot of boiling water, about 2 minutes. Transfer to sieve and drain. Cook pasta in the same water, also al dente. Drain, rinse with cold water, then drain again.

    Add broccoli, pasta and scallions to shrimp mixture. Toss with enough dressing to coat. It can be served either at room temperature or refrigerated.

    Makes 6 servings.
