    Crunchy Almond Chicken

    There are many versions of this, but, this is MY favorite way of making this. This has an EXCELLENT flavor!

    List of Ingredients




    6-8 Servings

    1 C. blanced slivered almonds
    1 clove garlic
    1 thin slice ginger root
    1 t. salt
    1 t. paprika
    1/4 t. gr. cumin
    1/4 t. bl. pepper
    6-8 Boneless and skinless chicken breast
    1/3 C. butter/marg. melted

    Recipe



    Place almonds, garlic, and ginger root in a blender container; cover and blend until finely ground. Mix that with the spices. Dip the chicken into the butter and then roll in the almond spice mixture. Place in an ungreased oblong pan 13x9". Cook uncovered in 375' oven till done, about 45 minutes-depending on thickness of your chicken breasts.

    ***I usually end up having to double the breading mixture***

    You can also use a broiler-fryer chicken cut up in place of the boneless/skinless chicken breast.
