    After trying many recipes and playing around with them, I finally came up with this one. Absolutely love it! It's the BEST in my opinion.

    List of Ingredients




    10 med. potatoes, boiled in skins
    8 slices bacon, chopped
    2 med. onions, chopped
    3/4 C. sugar
    2 t. dry mustard
    2 eggs, beaten
    3/4 C. white vinegar
    2 T. fresh parsley, chopped
    4 eggs, hard cooked and sliced
    s&p to taste

    Peel and cube the cooked potatoes and put in an ovenproof dish. Fry the bacon-remove and set aside. In the bacon grease, fry the onions untill tender-but not browned.

    Mix the sugar & dry mustard together and add to the onions in the frying pan. Add the beaten eggs and vinegar and cook untill thickened, stirring constantly.
    Pour over the potatoes, add s & p. Add the bacon and egg slices and mix lightly.

    Heat in 275-300' oven for 30 minutes and serve. Just before serving - sprinkle the parsley over the top.
