1 C. chopped onion
2 C. chopped potatoes
1 C. chopped celery
3/4 C. flour
3/4 C. butter
1 Qt. half & half
2 T. red wine vinegar
1 1/2 t. salt
2 (6 1/2 oz. each) can minced clams
dash pepper
Recipe
Drain juice from clams-reserve. Put all the chopped veggies in a sm. saucepan and pour the reserved clam juice in. Then add enough water to "barely" cover the veggies. Cover and simmer over medium heat untill veg's are barely tender.
In meantime; Melt the butter in soup pot and add the flour to it and blend. Cook just to make a roux. Add the half and half, cook and stir w/wire whisk untill creamy. (This is an important step or it will be lumpy).
Add the undrained veg's, clams, & vinegar and heat through. season with s&p to taste. Do not boil and do not let it sit on a hot burner once it's done.
**Only re-heat the amount needed at a time when reheating.**
