3 lbs.Potatoes (approx.) chopped
1 sm onion, chopped
1-2 carrots, chopped
S&P to taste
Thickner; 1/2 stick butter/marg., melted
3/4 -1 C. Flour
3/4 -1 C. milk
Dumplings; 1-2 eggs, flour, S&P
Recipe
Put the potatoes, onions, and carrots in lrg. pot with just enough water to cover them. Bring to a boil, lower heat and cook untill potatoes are tender.
About 5 min. before potatoes are done, add the thickner.
Thickner; melt the marg. and mix in the flour. Just before all the flour is mixed in start adding your milk. It should be a little thicker then gravy. Cook a little-simmering.
Then add dumplings; mix 1-2 eggs (depending on how many you want to make) and mix with enough flour to make a soft dough that you can pinch. Then pinch off small amounts (about 1 t. each) and drop into soup. Ler continue cooking.
DO NOT BOIL FOR VERY LONG! Or your dumplings will get tough.
I like to add s&p and a little garlic powder to my dumpling dough.
