    Stir-Fry Beef with Mango Slices

    1 lb flank steak
    2 tbsp Chinese cooking wine
    2 tbsp soy sauce
    2 tsp cornstarch
    1/2 tsp sugar
    1/2 tsp pepper
    2 large mango, skinned and cut into 1/4-inch thick slices
    2 tbsp vegetable oil
    2 tbsp ginger root, shredded
    2 tbsp green onions, shredded

    (Serves 6).



    Cut the flank steak into thin bite-sized slices. Mix together the wine, soy sauce, cornstarch, sugar, and pepper, and marinate the beef in this mixture for 20 minutes. Put your frying pan or wok over high heat, for a few minutes, pour the vegetable oil in. Reduce the heat to moderate and stir-fry the beef and ginger for a couple of minutes. Remove from the pan with a slotted spoon. Toss the mango slices into the hot oil for a few seconds and return the beef and ginger. Add the green onions and stir over the heat for a further few seconds. Serve immediately.
