Chinese Green Beans

1 lb green beans; trimmed
2 Tbl soy sauce
2 Tbl water
1 tsp cornstarch
1 tsp brown sugar ( I use Splenda)
1 tsp sesame oil (I omit because I never have any on hand)
1/4 tsp red pepper flakes
2 tsp peanut oil (I often use Canola oil)
1 tsp minced garlic
1 tsp ginger root; minced
toasted sesame seeds (optional)Recipe
1. Steam green beans until crisp tender, about 10 minutes.
2. Run under cold running water. Drain.
3. Meanwhile, mix soy sauce, 2 tablespoons of water,
cornstarch, sugar, sesame oil and crushed red pepper in
a small bowl until the cornstarch is well dissolved.
4. Heat peanut oil in a large skillet, or wok over medium-
high heat. Add beans and stir-fry 3 minutes, until beans
are very hot and start to char in spots. Add garlic and
ginger root. Continue stir-frying 2 minutes.
5. Pour in soy sauce mixture. Toss beans constantly until
beans are evenly coated and glazed, about 1 - 3 minutes.
6. Toss w/ toasted sesame seeds (just put the raw seeds in a frying pan and toast until brown - NO oil)
Serve immediately.
Avidcook’s notes: I use canola oil, substitute Splenda for the sugar, and sometimes omit the sesame seeds. This tastes like the green beans you get in a Chinese restaurant. Yummy
