1 ½ cups unsweetened applesauce
2 T. canola oil
1 large egg
2 cups unbleached white flour
2 t. baking powder
¾ t. baking soda
2 t. cinnamon
½ t. nutmeg
1 2/3 cups raisins
Recipe
Heat oven to 375 degrees.
Beat together the applesauce, oil and egg.
Add flour, baking powder, baking soda, and spices; beat well.
Stir in raisins.
Spoon batter into oiled muffin liners.
Bake for 20 to 25 minutes or until firm to the touch and lightly browned.
Cool completely on wire racks.
Yield: 12 muffins.
