1/2 cup nonfat cottage cheese
2 large eggs
2 tbsp. whole wheat flour
Cinnamon to taste
Sugar or Splenda, to taste (added 1 tbsp sugar)
You can also had 1 tsp ground flax seed to an added protein/fiber/omega-3 - or mix in some chopped nuts, or whatever.
Recipe
Combine all ingredients and blend well - Teresa uses a handheld whiz-mixer thing, I used my blender.
Non-stick spray a pan, put it on medium heat, pour the batter in (don't make them too thick - keep them on the thin side because they cook through better that way)....and fry like a regular pancake.
Top with whatever you desire.
