    2 sticks of butter, softened
    1 cup smooth peanut butter
    1 cup light brown sugar
    1 cup sugar
    2 eggs
    1 tsp. vanilla
    3 1/2 cups flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 pkg (might take a few more; I buy two packages just in case) Snickers miniatures
    Powdered sugar to coat with (about 2 cups)
    chocolate icing (recipe follows)

    1/2 cup hershey's cocoa powder
    1 stick butter, melted
    3 cups powdered sugar
    1/3 cup milk

    Cookie instructions:

    Combine sugars, butter and peanut butter in large bowl. Mix w/mixer on low speed until light and fluffy.
    Slowly add eggs and vanilla (still using mixer), then gradually add flour, soda and salt and mix with spoon until well blended.
    Dough will be soft; chill for 2-3 hours or overnight (if it's too soft, if not, don't bother)
    Preheat oven to 300 degrees.
    Divide dough into 1 tbsp. pieces and flatten (I put them on a sheet of wax paper). Place a snickers mini in the center of each one and form the dough around it, in a ball-like shape. Place on GREASED cookie sheets and bake for approximately 13 minutes.

    Icing instructions:

    Melt butter and stir in cocoa powder. With mixer on low speed, gradually beat in powdered sugar and milk. Mix until it well blended and thickened a bit, approx. 2 minutes.
    If you don't have a plastic pastry bag and the appropriate tube (small rounded one) or a similar piping utensil, you can fill a Ziploc bag with icing and snip off the corner (a SMALL snip!) and drizzle the icing this way. (If you prefer not to drizzle, you can always just skip the powdered sugar coating and completely ice the tops of the cookies.)

    When cookies are cool, dip in powdered sugar and drizzle with chocolate icing.

    Yield approx. 3 1/2 dozen cookies
