Diana's Intro: The following recipe for pizza is one of my favorites. My friends often request it and I was even in the Syracuse newspaper on May 19, 1996 with my recipe. Just remember, you can change how hot or mild you make it by changing your ratio of red hot sauce to blue cheese dressing and the measurements for the toppings also depend your own preferences.
1/2 chicken breast, boneless & skinless
Basic pizza dough (see recipe in pizza section)
1/3 cup blue cheese dressing
1/4 cup red hot sauce (I prefer Frank's Original)
Onions
Mushrooms
1 1/2 to 2 cups shredded mozzerella
freshly ground pepper
1 to 2 stalks celery, thinly sliced
Recipe
Preheat the oven to 425 degrees Farenheit. Cut the chicken into bite-sized pieces and cook in a frying pan over medium heat until just cooked. I usually add lots of freshly ground black pepper while I'm cooking it. Set chicken aside and roll out the dough onto a well-floured surface or flatten into a greased pizza pan. Now I usually just pour my red hot & my blue cheese dressing directly on the dough and spread them so they only partially mix but if you prefer a more even, milder taste then it's best to mix the two until well combined before spreading it on the dough. Then evenly distribute the chicken, onions & mushrooms over the pizza. (As much or as little as you like!) Then top with the mozzerella and sprinkle with freshly ground pepper. (Again more or less to suit your tastes!) Bake in the oven for 10 to 15 minutes or until the crust is browned just under its edges and the cheese is bubbly. Sprinkle with the celery immediately and let stand 5 to 10 minutes before cutting and serving.
