    • 1 cup sugar
    • 1/2 cup butter, softened
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1 cup buttermilk
    • 1 3/4 cups all-purpose flour
    • 1/2 cup unsweetened cocoa
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/3 cup chopped nuts


    Instructions


    1. Preheat oven to 350 degrees. Grease bottom only of a 9x5 inch loaf pan.
    2. In a large bowl, combine sugar and butter, bledning thoroughly. Add eggs and vanilla; mix well. Stir in buttermilk. Add flour, cocoa, baking powder, baking soda and salt. Stir just until dry ingredients are moistened. Stir in nuts.
    3. Pour into prepared pan. Bake at 350 degrees for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan; cool completely before slicing.
    4. Yield: 12 servings
    5. Chocolate Honey Butter: 1/2 cup butter, softened, 2 tablespoons honey, 2 tablespoons chocolate syrup. In a small bowl, combine all ingredients. Beat at highest speed of electric mixer until light and fluffy.
    6. Yield: 1 cup
