- 2 cups tomato juice
- 2 tablespoons sugar
- 3 tablespoons quick cooking tapioca
- 2 teaspoons salt
- 1 pound beef stew meat
- 1 onion, cut into chunks
- 4 carrots, cut into chunks
- 1 stalk celery, can take out before serving
- 4 potatoes, cut into chunks
Instructions
- Combine tomato juice, sugar, tapioca and salt in a bowl. Do this first so it has time to combine before you start with preparing the vegetables and meat. Take a jelly roll pan and a big sheet of heavy duty aluminum foil so you can seal top and sides with foil.
- Combine meat (do not brown) and vegetables in foil. Top with tomato mixture, seal with heavy duty aluminum foil (seal making a little tent on top so the foil is not touching the food) and bake about 4 hours at 250 degrees. This is a slow cook recipe. You have a nice tomato gravy sauce.
