    List of Ingredients


    • 2 cups tomato juice
    • 2 tablespoons sugar
    • 3 tablespoons quick cooking tapioca
    • 2 teaspoons salt
    • 1 pound beef stew meat
    • 1 onion, cut into chunks
    • 4 carrots, cut into chunks
    • 1 stalk celery, can take out before serving
    • 4 potatoes, cut into chunks


    Instructions


    1. Combine tomato juice, sugar, tapioca and salt in a bowl. Do this first so it has time to combine before you start with preparing the vegetables and meat. Take a jelly roll pan and a big sheet of heavy duty aluminum foil so you can seal top and sides with foil.
    2. Combine meat (do not brown) and vegetables in foil. Top with tomato mixture, seal with heavy duty aluminum foil (seal making a little tent on top so the foil is not touching the food) and bake about 4 hours at 250 degrees. This is a slow cook recipe. You have a nice tomato gravy sauce.
    3. Yield: 4 servings
