    If you're worried about calories, fat, carbs, etc. forget it. If you want to go for broke, this is great!!! I always tell everyone my hubby fell for me after trying these potatoes and my apple pie.

    List of Ingredients




    Potatoes, use your judgement - usually 1-2 potatoes per person. I did not like the Yukon Gold, red potatoes are the best.

    Bacon, I usually use 1 pound

    Cheese, grated. I use Colby but use the cheddar of your choice

    Onions, again, according to taste

    Butter - lots

    Recipe



    Boil the potatoes, whole and unpeeled, until done (poke with a fork, we like ours a little "al dente", not real mushy). Drain off water and cool enough to handle & then peel by hand (skin comes off easily). I like to leave on a little of the peeling if using the red potatoes.
    While potatoes are cooling, preheat oven to 350*, cook bacon until crisp, do not discard the bacon grease. And grate the cheese.
    Saute the onions in 1 stick of melted butter & some of the bacon grease.
    When the potatoes are peeled, slice in about 1/4 inch slices (I usually put this in the pot that the potaoes are boiled in). Pour butter/sauted onion mix over potatoe slices. Crumble bacon on top of this & mix ingredients thoroughly. Pour into baking dish, the one that is about 2-3 inches deep. Spread grated cheese on top, cover with foil & place in preheated oven, 350* for approximately 20 minutes or until heated thoroughly and cheese is melted.
    Note: Add more butter/bacon mixture of needed to thoroughly coat the ingredients.
