Spicy Sesame Chicken Strips

- 4 bonelss, skinless chicken breast halves (about 1 1/4 pounds)
- 1/2 cup hoisin sauce
- 1/2 cup orange marmalade
- 2 tablespoons honey
- 1/4 to 1/2 teaspoon ground red pepper (cayenne)
- 1 teaspoon finely chopped gingerroot
- 1 clove garlic, finely chopped
- 8 red pearl onions, peeled and halved or 16 grape tomatoes
- 8 whole green onions
- 1 tablespoon sesame seed, toated if desired
Instructions
- Heat oven to 425. Line jelly roll pan 15 1/2x10 1/2x1 inch, with aluminum foil.
- Cut each chicken breast half lengthwise into 4 strips. Thread chicken strip on each of sixteen 8- to 10-inch skewers, leaving 1/2 inch space on pointed end. Place skewers in pan; set aside.
- Mix remaining ingredients except tomatoes, onion and sesame seed. Reserve 1/2 cup hoisin mixture. Spoon remaining hoisin mixture into small serving bowl; cover and refrigerate until serving. Brush chicken with 1/2 cup reserved hoisin mixture.
- Bake 12 to 15 minutes, brushing chicken occasionally with pan drippings, until chicken is no longer pink in center. Thread 1 onion half on each end of skewer. To serve, line serving platter with onions; arrange skewers on onions. Sprinkle sesame seed over chicken. Serve with remaining hoisin mixture (heated if desired).
