Ginger Butter Cookies

- 2/3 cup firmly packed brown sugar
- 1/3 cup sugar
- 1 cup butter, softened
- 1 teaspoon vanilla
- 2 cups Pillsbury BEST All Purpose Flour
- 1 teaspoon ginger
- 1/2 teaspoon salt
- 1 (2-oz.) jar (1/3 cup) finely chopped crystallized ginger

Instructions
- Heat oven to 350 F. In medium bowl, combine brown sugar, 1/3 cup sugar and butter; beat until light and fluffy. Add vanilla; blend well.
- Lightly spoon flour into measuring cup; level off. Add flour, ginger and salt; mix well. Stir in crystallized ginger. Shape dough into 1-inch balls; roll in 1/3 cup sugar. Place 2 inches apart on ungreased cookie sheets. Flatten with bottom of glass dipped in sugar.
- Bake at 350 F. for 7 to 10 minutes or until edges are light golden brown. Cool 2 minutes; remove from cookie sheets.
