Blackberry and Apple Jam

- 2 lb cooking apples
- 1 1/4 cups water
- 4 lb blackberries
- 14 cups sugar, warmed
Instructions
- Peel, core, and roughly chop the apples. You should have about 1 1/2 lb in weight. Put the apples and half of the water into a medium saucepan. Bring to a boil, lower the heat, and simmer, stirring occasionally, for about 10 minutes or until the apples are very soft. Set aside.
- Put the blackberries and the remaining water into a preserving pan. Bring to a boil, and simmer for about 15 minutes or until the blackberries are soft. Add the apples and return to a boil. Add the warmed sugar to the fruit mixture, and stir with a wooden spoon until the sugar has completely dissolved.
- Increase the heat and boil the mixture rapidly, without stirring, for about 10 minutes, or until it reaches setting point. Remove the pan from the heat to test. The candy thermometer should read 220 F. If you do not have a candy thermometer, test for setting with the cold plate test.
- With the pan off the heat, lightly skim off any froth from the surface of the jam, using a long-handled metal spoon. Immediately pour the jam into warmed sterilized jars, to within 1/8 inch of the tops. Seal the jars and label.
