Nectarine Jam

Nectarines, like peaces, are low in pectin, so it is easier to achieve a set with this jam if commercial liquid fruit pectin is added. When using this pectin, lemon juice must be added and the jam must not cook for too long because it reaches setting point quickly and overcooking reduces the pectin's setting properties.
List of Ingredients
- 3 lb nectarines
- 2/3 cup sugar
- 7 1/2 cups sugar
- 1/4 cup lemon juice
- one 3 oz package liquid fruit pectin
Instructions
- Halve and pit the nectarines, but do not peel them. Chop them coarsely.
- Put the chopped nectarines and water into a preserving pan, and simmer for 15 minutes or until the fruit is soft.
- Crush the chopped nectarines with a potato masher. Add the sugar, lemon juice, and pectin to the nectarine mixture, and stir over low heat until the sugar has completely dissolved.
- Increase the heat and boil the mixture rapidly, without stirring, for only 1 minute or accordng to package instructions.
- With the pan off the heat, lightly skim off any froth from the surface of the jam, using a long-handled metal spoon. Cool the jam slightly.
- Immediately pour the jam into warmed sterilized jars, to within 1/8 inch of the tops. Seal the jars and label.
