    Pomegranate juice adds a deliciously tangy taste to this colorful dish. It's sure to brighten any holiday spread.


    List of Ingredients


    • 2 cups boiling water
    • 1 pkg. (8-serving size) Jell-O Brand Cherry Flavor Gelatin
    • 1 cup cold water
    • 1/2 cup cold pomegranate juice
    • 1 can (15 oz.) mandarin orange segments, drained, divided
    • 2 cups thawed Cool Whip Whipped Topping
    • 1/4 tsp. ground cinnamon
    • 1/8 tsp. ground cloves


    Instructions


    1. STIR boiling water into dry gelatin mix in 2-qt. serving bowl at least 2 min. until completely dissolved. Stir in cold water and juice. Refrigerate 1 to 1 1/4 hours or until thickened (spoon drawn through leaves definite impression).
    2. REMOVE 1/4 cup of the oranges; set aside for later use. Add remaining oranges to gelatin; stir gently. Refrigerate 30 min. or until gelatin is set but not firm (gelatin should stick to finger when touched and should mound). Combine whipped topping and spices; spoon over gelatin.
    3. REFRIGERATE 4 hours or until firm. Top with reserved oranges just before serving. Garnish with mint leaves, if desired. Store any leftovers in refrigerator.


    Final Comments


    Makes 14 servings, about 1/2 cup each.
