Spinach & Ricotta Manicotti

- 1 pkg. (10 oz.) frozen chopped spinach, thawed and squeezed dry
- 1 (15 oz.) container Ricotta Cheese
- 1 egg
- 1/2 cup Grated Parmesan Cheese
- 1 tsp. garlic salt
- 8 manicotti shells, cooked and drained
- 1 can (14.5 oz.) Contadina Tomato Paste with Italian Herbs
- 1 tsp. basil leaves, crushed
- 1 cup Mozzarella Cheese, shredded
Instructions
- Combine spinach, ricotta cheese, egg, parmesan cheese and garlic salt. Spoon into cooked manicotti shells; place in 12x8-inch baking dish.
- Combine undrained tomatoes, tomato paste, basil plus 1 cup water. Pour over manicotti. Sprinkle with mozzarella cheese.
- Bake uncovered in preheated 350 F oven, 30 minutes or until heated through.
