    Kraft South Beach Diet Recipe Sampler

    List of Ingredients


    • 1 Tbsp. extra virgin olive oil
    • 4 large bell peppers, cut into 2-inch wedges
    • 1 large red onion, sliced and separated into rings
    • 1 Tbsp. balsamic vinegar
    • 1 tsp. dried basil
    • 1/4 tsp. salt
    • 1/4 tsp. ground black pepper
    • 2 plum tomatoes, chopped
    • 3 Tbsp. chicken or vegetable broth or water


    Instructions


    1. Heat the oil in a large skillet over medium hat. Add the bell peppers and onion and cook, stirring occasionally, for 5 minutes, or until the onion starts to soften.

    2. Add the vinegar, basil, salt, and black pepper, and cook for 1 minute. Add the tomatoes and broth or water. Reduce the heat to low, cover, and simmer, stirring occasionally, for 8 minutes, or until the vegetables are very tender.
