Sautéed Peppers and Onions

- 1 Tbsp. extra virgin olive oil
- 4 large bell peppers, cut into 2-inch wedges
- 1 large red onion, sliced and separated into rings
- 1 Tbsp. balsamic vinegar
- 1 tsp. dried basil
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 2 plum tomatoes, chopped
- 3 Tbsp. chicken or vegetable broth or water
Instructions
- Heat the oil in a large skillet over medium hat. Add the bell peppers and onion and cook, stirring occasionally, for 5 minutes, or until the onion starts to soften.
- Add the vinegar, basil, salt, and black pepper, and cook for 1 minute. Add the tomatoes and broth or water. Reduce the heat to low, cover, and simmer, stirring occasionally, for 8 minutes, or until the vegetables are very tender.
