Crab Scampi

my version adapted from Olive Garden Chicken Scampi

Serve pasta with salad and garlic bread.

1 lb imitation crab meat
2 T. butter
2 T. Olive oil
2 T. chicken stock
1/2 red pepper, chopped
3 or 4 cloves garlic, crushed
4 scallions chopped, include green part
1/8 cup chopped red onions
2 carrots, sliced very thin, or shredded and cooked aldente
1 cup white wine like rhine or chablis, as long as it is not sweet
1/2 tsp crushed red pepper
1 tsp. oregano
1/2 tps. basil, fresh is best
1/4 cup fresh chopped parsley
fresh black pepper, to taste
1/2lb box angel hair or thin pasta
Sauce
1 T. butter
2 T. flour
1 C. skim milk
1/2 cup grated romano or your favorite mix
Recipe
Heat butter and olive oil. Saute peppers, onions, garlic, until transparent.
add crushed pepper, basil, parsley, oregano, mix well then add imitation crab, turn on lowest setting.
Steam carrots separately, briefly, and then drain and add to above mixture.
Meanwhile start sauce mix below.
Sauce
heat 1 T. butter in nonstick skillet. When melted add 2 T. flour and cook for 2 minutes making a roux. Slowly add 1 cup milk heat slowly stirring constantly. Add cheese and mix, set aside.
When roux is ready add to crab and veggie mixture. Grind in fresh black pepper, Mix well. Serve over angel hair pasta. If sauce is too thick thin with a little chicken broth or a little more milk.
