Recipe Introduction
Weight Watcher soup. Eat when you feel hungry. Do not have to include this in your food plan. O points.
I make a large batch and add additional vegetables, 1-2 stalks of sliced celery, 1/4 red or green pepper diced. I also substitute 1 can of diced tomatoes instead of fresh.
List of Ingredients
1/4 cup diced onion
2 pkgs. instant chicken broth
2 garlic cloves, minced
1 1/2 cups thinly sliced zucchini
1/2 cup thinly sliced carrot
1/2 cup chopped tomato
1 tsp. chopped fresh parsley
1/4 tsp basil
1/8 tsp pepper
2 cups water
Recipe
1. Cook onion, broth mix and garlic until onion is translucent. Add remaining ingredients and cook about 10 minutes. Add 2 cups water. Bring to boil and reduce heat to medium, cover and cook until vegetables are tender, about 20 minutes.
2. Use a slotted spoon; remove about 1/2 cup of vegetables. Blend the remaining stock with hand blender to desired consistency. Add reserved vegetables and serve.
