Sausage, Cheese & Pasta Casserole

9 cups uncooked rotini (spiral) pasta
2 cans spaghetti sauce
onions, garlic
grated cheese.. I probably use about 3 cups and it is whatever chees l have on hand..
marbled, cheddar or mozzarella all work fine
6 large "ocktoberfest" sausage... that is what they are called here.. they are not the breakfast but the larger ones .
Recipe
I pierce my sausage and boil them first just to get any unwanted extra fat out of them. Then cut into bite sized pieces and fry up with diced onions and minced garlic to taste.
While those are cooking I boil the pasta, drain and put into a large bowl. . Add cooked sausage and spaghetti sauces . Mixing well. Put half of the mixture into a deep , large casserole dish . Then layer a generous portion of grated cheese on it and top with the rest of the pasta mixture. Put more grated cheese on top and bake in 350 oven for about 30 minutes or until heated through. This casserole freezes very well so I always double it. I also have used ground beef instead of the sausage and it awesome to. I get rave reviews when I give this casserole away.
