    Grandma's Vegetable Beef Soup

    List of Ingredients




    1 pound of cubed stew beef
    1 small cabbage, grated
    3 large potatoes, peeled & diced
    3 tins stewed tomatoes or chopped tomatoes
    4 stalks celery, chopped
    6 carrots, diced or sliced
    2 onions, diced
    1 small bag of frozen sweet peas
    1 small bag of frozen green beans
    (you could use one 16oz. of frozen mixed veg-
    peas, green beans, carrots)
    1 tin of tomato juice or V-8 juice* (we love V-8)
    1 tin of beef broth
    Salt
    Pepper
    (if your children don't like veg. soup - you can add
    1/2 cup of alphabet pasta to it to make it more
    appetizing to them)

    Put all raw or frozen vegetables and onions into a
    large stock pot with water and boil until tender but
    not mushy. Brown beef cubes. Cut each cube in 1/2.
    Add beef, salt, pepper, tomato juice or V-8, stewed
    tomatoes, and beef broth to vegetables. If you want to
    add the alphabet pasta prepare according to pkg.
    directions and add to soup. This is a really nice
    soup and it can freeze well in a zip lock bag. Freeze
    flat to save freezer space. When ready to use lay in
    bag in hot or boiling water but be careful. When
    thawed, toss into pot and heat through.
