    MANGO CHEESE

    This can be used as an appetizer or a light dessert


    List of Ingredients


    • 1 dozen mangoes
    • 3/4 cup sugar to each cup of pulp
    • 1/2 teaspoon lime juice to cup of pulp
    • Some rum


    Instructions


    1. Peel Mangoes and rub through a sieve
    2. To every cup of pulp, add 3/4 cup sugar
    3. Add lime juice
    4. Boil until thick, stirring continuously until mixture leaves the side of pan or kettle it that's all you have on the island.
    5. Brush a tin sheet with rum and pour cheese therin
    6. Should be about 1 inch thick. Set to cool.
