3/4 pint strong Instant Blue Mountain Coffee (cold)
1 pint cold milk
2 tablespoons granulated sugar
2 egg yolks
1 egg white
ice
Instructions
Put the coffee, milk, sugar and beaten egg yolks into a bottle and shake vigorously until the mixture is frothy. You could do in a blender but of course on an island without electricity, you would have to do the bottle method.
Beat the egg white very stiffly.
Put some cracked ice in serving vessels.
Pour the coffee mixture into the vessels and fold in half of the beaten egg whites. Float the remaining egg white on the top.
