    JAMAICA GINGER BEER

    For those of us who can't handle the hard liquor


    List of Ingredients


    • 5 oz fresh Jamaica ginger
    • 1cake yeast
    • 2-1/2 cups granulated sugar
    • 1/4 cup Jamaica honey
    • 1 egg white
    • 2 quarts water
    • 1/4 cup lime syrup
    • Antostura Bitters


    Instructions


    1. Peel and grate ginger, add water, sugar, honey and lime syrup and pour into an earthenware or glass bowl.
    2. Add yeast and egg white slightly beaten. Stand in a cool place for three days. Pour off without stirring and strain through a clean cloth bag. Add more sugar to taste and a few drops of Angostura bitters. Bottle and refrigerate.
