Chicken Soup & Matzo Balls
List of Ingredients
- 1(4-5 lb)chicken
- 3 qt.cold water
- 3 lg carrots
- 5 stalks celery
- 1 sm.bay leaf
- 1 tbsp.salt
- 1/2 tsp.pepper
- one lg.onion
- Matzo Balls
- 2 tbsp. vegetable oil
- 2 large eggs,slightly beaten
- 1/2 cup Matzo Meal
- 2 tsp.salt
- 2 tbsp.water
Instructions
- Place cut up chicken in pot with cold water.Cover
and bring slowly to a boil. Skim off top.
- Add seasoning and vegetables.Simmer gently about 3 hours. Remove onion.
- Matzo Balls-Blend vegetable oil and eggs together.Mix
matzo meal and salt mixture to egg & vegetable oil mixture.Blend well.
- Add water and mix until uniform.Cover mixing bowl and
place in refrigerator for 15 minutes.
- Using a 2 0r 3qt.pot,bring 1 1/2 cups of water(salted)
to a brisk boil.Reduce flame& into the slightly boiling
water drop matzo balls approx.1 inch in diameter formed
from the refrigerated mixture.Cover pot& cook 3-40 min.
- Soup should be at room temperature.Place cooked matzo
balls into soup.Simmer for approx. 5 minutes & serve.
