SWEET & SOUR CHICKEN WITH PINEAPPLE

- 1 CHICKEN 3 LBS. CUT UP
- SALT & PEPPER
- 2 TBSP CIDER VINEGAR
- 2 TBSP TOMATO PASTE
- 1 CAN (16 OZ) PINEAPPLE CHUNKS (SYRUP RESERVED)
- 2 TBSP SOY SAUCE
- 1/4 TSP GROUND GINGER
- 1 ONION CHOPPED
- 1 LARGE GREEN BELL PEPPER CUT INTO 1 " SQUARES
- 1 TBSP CORN STARCH DISSOLVED IN 2 TBSP OF WATER
Instructions
- PREHEAT OVEN TO 450 SEASON CHICKEN W/SALT & PEPPER
ARRANGE (SKIN UP) IN A LIGHTLY GREASED 13X9X2" BAKING DISH BAKE FOR 20 MINS, UNTIL BROWN
- COMBINE VINEGAR, TOMATO PASTE & PINEAPPLE SYRUP
WITH ENOUGH WATER TO MAKE 2 CUPS. POUR INTO LARGE BOWL. ADD SOY SAUCE 7 GINGER. STIR UNTIL WELL BLENDED.
ADD ONION & BELL PEPPER. SET ASIDE.
- LOWER OVEN TO 325
- POUR MIXTURE OVER CHICKEN. COVER AND BAKE FOR 30 MINUTES.
- ADD PINEAPPLE TO CHICKEN. COVER AND RETURN TO OVEN FOR 10 MINUTES. BAKE UNTIL CHICKEN IS TENDER AND FRUIT IS COMPLETELY HEATED.
- REMOVE CHICKEN TO PLATTER. POUR SOUCE INTO SMALL SAUCEPAN. STIR IN DISSOLVED CORN STARCH. BRING TO BOIL, STIRRING UNTIL THICKENED. POUR OVER CHICKEN.
