Kalaki's Island Sweet Potatoes
If you are on a diet....this is not the recipe for you!!!
These potatoes will melt in your mouth and are a great addition to any meal.
Note: You can substitute margarine for butter, but I would not use anything other than King Syrup!!!
List of Ingredients
- 10 - 15 Large Sweet Potatoes
- King Syrup
- Dark Brown Sugar
- Butter
- 8 oz can of chunck pinapple w/juice
Instructions
- Microwave sweet potatoes (4 at a time) for approximately 5 minutes. Potatoes should be firm.
- Remove from microwave and peel skin off sweet potatoes.
Repeat until all sweet potatoes are skinned.
- Pour pinapple juice in bottom of baking dish.
- Coat bottom of pan with brown sugar, king syrup and butter.
- Slice sweet potatoes and lay first layer in bottom of baking dish.
- Add a dab of butter to each potatoe and then sprinkle layer with brown sugar and king syrup.
- Repeat process until all potatoes are sliced and covered.
- Add some of the pinapples throughout layer and on top.
- Note: You do not have to include pineapple....this ingredient is optional.
- Preheat oven to 375 - 400. Bake potatoes until juice thickens.
- This process may take some time depending on oven temperature.
- Make sure to baste potatoes every 15 minutes or so to keep the top layer moist.
- Bake approximately 1 1/2 to 2 hours.
