Spinach Balls

A family favorite I grew up with!
List of Ingredients
4 boxes chopped frozen spinach (defrosted & drained)
*squeeze out excess water!
8 eggs
1 C parmesean cheese
1 1/2 C melted butter
4 C herbed stuffing mix (see note below)
2 cloves garlic, minced
2 lrg onions, finely chopped
1 Tbsp thyme
Recipe
Mix all ingredients together.
Refridgerate at least 2 hours.
Roll into 1" balls (size of walnuts)
Place on ungreased jelly roll pan w/ sides.
Bake a 300 for 30 minutes.
Serve warm.
If they look like they're browning too much on bottom, turn over after 15 mins.
Note: 4 cups Mrs. Cubbison dressing = 1 1/3 bags or about 8 oz. by weight.
** You can freeze on a cookie sheet & then place in a freezer bag. Defrost before baking.
