    Bittersweet Chocolate Frosting

    (Wonderful on a yellow or white layer cake)

    4 squares Baker's unsweetened chocolate (equal to 4 ounces if you use another chocolate)

    1 1/2 Tbsp. butter
    1 cup sugar
    1 cup milk
    1 tsp vanilla

    Boil until thick, stirring constantly.
    Will take a while to come to boil.
    Add 1 tsp vanilla.
    Cool and spread.

    Great Chocolate Frosting


    1 cup sugar
    ¼ cup milk
    ¼ cup butter
    ½ cup mini marshmallows
    ½ cup chocolate chips

    1. Microwave sugar, milk & butter for 3 minutes.
    2. Stir in marshmallows & chocolate chips.

    WHIPPED CREAM FROSTINGS:


    How about whipped cream frosting? I love it because it is not overly sweet. (or you could take the easy way out and use cool whip instead of whipped cream)

    Easy Cool Whip Frosting
    1 cup cold milk
    1pkg instant pudding
    1/4 cup powdered sugar (optional)
    8oz cool whip, thawed

    Combine milk, pudding and sugar.
    Beat with wire whisk 2 minutes.
    Gently stir in cool whip.

    ANOTHER:

    If you mix together 1 tub of ready made frosting with a large tub of cool whip it makes it creamer and less sweet.

    LEMON FROSTINGS:



    Lemon Frosting


    3 tbsp. orange rind
    Dash of salt
    3 tbsp. butter
    3 c. confectioners' sugar
    2 tbsp. fresh lemon juice
    1 tbsp. Water


    Add orange rind and salt to butter & cream well.
    Add part of confectioners' sugar, with combined lemon juice and water to creamed mixture.
    Add remaining sugar until proper consistency to spread.
    This is a tangy, delicious frosting on pound cake.





    Awesome Lemon Icing

    Stir in a box of instant lemon pudding in a tub of cool whip and frosted a cake with it.
    How DID you make it, several people asked?
    I felt like flicking flour on my face like in the rice krispie bar commercial.

    Glaze for Lemon Cake

    1 cup powdered sugar
    2 Tbsp. lemon juice

    Beat together until smooth & drizzle over cooked cake.




    PEANUT BUTTER FROSTINGS:

    This one is very different. My oldest son requests this on his birthday cake every year.


    Peanut Butter Broiled Topping


    1/2 c. brown sugar
    1/4 c. peanut butter
    2 Tbsp. softened butter
    2 Tbsp. milk

    Combine all ingredients.
    Spread on warm cake.
    Broil until golden brown.
    I do double this recipe as my kids love it so much.

    You can also use a can of prepared vanilla frosting and then add a Tbsp.or more of p-nut butter. It’s quick and good!

    Apple Cider Frosting
    ________________________________________

    ½ C butter or margarine, softened
    ¼ C apple cider
    4 C powdered sugar

    Beat butter & apple cider in medium bowl until creamy & well blended.
    Gradually beat in powdered sugar until smooth.

    Makes about 4 cups.

    1 (8-ounce) package cream cheese, softened
    3 tablespoons butter or margarine, softened
    1 1/2 cups powdered sugar
    1/8 teaspoon salt
    1 teaspoon vanilla extract


    BEAT cream cheese and butter at medium speed with an electric mixer until creamy.
    Gradually add sugar and salt, beating until blended.
    Stir in vanilla.
    Yield: 1 2/3 cups.
    Prep: 10 min.

    CREAM CHEESE FROSTING


    One 8-ounce package cream cheese, softened
    1/2 cup (1 stick) unsalted butter or margarine, softened
    One 1-pound box confectioner's sugar
    1/4 to 1/8 tsp. salt
    1 teaspoon vanilla extract



    LET BUTTER AND CREAM CHEESE SOFTEN TO ROOM TEMP.
    Cream well.
    Add confectioners sugar & salt & continue beating until creamy.
    Add vanilla.
    Spread on cake...





    GENERAL FROSTINGS:


    7 Minute Icing


    This is so good, and you can add food coloring if you would like it colored to match your cake! Hope you enjoy!


    2 egg whites
    1 1/2 cups white sugar
    1/3 cup cold water
    1 1/2 teaspoons light corn syrup
    1 teaspoon vanilla extract


    Put egg whites, sugar, water and syrup in top of double boiler.
    Beat until mixed well.
    Place over rapidly boiling water.
    Beat constantly with electric beater while it cooks for 7 minutes or until it will stand in peaks when beater is raised.
    Remove from heat.
    Add vanilla & beat.

    Fills and frosts 2 layer cake, 8 or 9 inch.

    Makes 12 servings

    MOUNTAIN HIGH FROSTING *****

    1/3 C sugar
    1/3 C white syrup (Karo type)
    1/3 tsp. cream of tartar
    1/8 tsp. salt
    2 egg whites
    ½ tsp. vanilla

    Mix everything together & beat ion high until peaks are light & fluffy.
    (about 15 mins.)
    Then add vanilla.
