15 Bean and Kielbasa Soup

List of Ingredients
1 16 oz. Pkg. dried 15-bean soup mix (sorted and rinsed)
1 lb. kielbasa sausage (cut into 1/4“ slices)
1 pkt. onion soup mix
1 can diced tomatoes, undrained
3 med. stalks celery (cut into 1/4“ slices)
1 large onion, chopped
2 cloves garlic, finely chopped
6 cups water (or more)
2 chicken bouillon cubes
1/2 tsp. cayenne pepper
1/2 teaspoon pepper
1 tsp. salt (add salt at last minute, a tsp. at a
time, according to taste)
Recipe
Mix all ingredients except tomatoes in 5-6 quart slow
cooker.
Cover and cook on high for approx. 10-12 hours or until
tender.
Stir in tomatoes.
Cover and cook on high for 15 mins. or until hot.
Makes 12 servings.

Instructions for the Quick-Soak method:
In large saucepan combine 1 lb. dried beans with 6-8 cups hot water.
Heat water to boiling & cook 3 mins.
Remove beans from heat, cover & let stand 1-2 hour. Drain & rinse.
Simmer beans in fresh water 1-1/2 to 2 hours or until tender. Drain and use.
OR…
Place beans in large pot with 6 cups water.
Bring to boil & boil 60-70 mins.
Drain & rinse.
Follow recipe desired.
OR…
Combine first 5 ingredients of recipe (liquid should cover 1“-2”) in crock pot.
