List of Ingredients
2 qts. 1% milk (half-gallon)
1 1/2 cups white sugar
1 cup small pearl tapioca (can find at Asian market or "fancy" grocery store)
3 eggs
1 tsp. vanilla
Recipe
In 4 qt. or larger size crockpot, combine milk, sugar & tapioca pearls ; Stir well to mix.
Cover & cook on high 2-5 hours.
* You're looking for tapioca to be soft & somewhat slimy. Will not be very thick, it's okay.
In separate bowl, mix eggs with vanilla.
Take 1/2 cup hot milk & tapioca mixture & whisk milk into egg bowl ("tempering the eggs"). Add another 1/2 cup hot milk & tapioca & whisk into eggs, too.
Then add yet another.
Pour contents into crockpot & whisk until thoroughly combined.
Cover & cook on high another 30-45 mins., or until tapioca is pudding-like in consistency.
Unplug & let sit about an hour to cool.
Chill in refrigerator or eat with serving spoon, hot, right out of crockpot!
