    List of Ingredients





    12 tbs. Minute tapioca
    12 tbsp. sugar
    4 egg yolks
    8 tbsp. sugar
    ½ tsp. salt
    8 C milk
    4 egg whites
    3 tsp. vanilla

    Recipe



    Mix tapioca, salt, 12 tbsp. sugar & yolks in a pan.
    Let stand 5 mins.
    Beat egg whites until foamy.
    Gradually beat in 8 tbsp. sugar, beating to soft peaks. Set aside.
    Cook tapioca mixture over medium heat to full boil,
    stirring constantly 6 -8 mins. or longer.
    Gradually add it to beaten egg whites, stirring quickly just until blended.
    Stir in vanilla.
    Cool 20 mins.
    Stir and serve warm.

    Makes 20 cups
