Italian Doughnuts

Vegetable oil, for frying
Olive oil, for frying
1 lb. prepared pizza dough
3/4 cup sugar
1 1/2 tsp. gr. cinnamon
Recipe
Pour equal parts vegetable oil & olive oil into large frying pan to 2".
Heat oil over med. heat until thermometer registers 375F.
Roll out dough on lightly floured surface to 1/2" thickness.
Using floured 2" cookie cutter, cut out doughnut rounds.
Using floured 1" cookie cutter, cut out hole in center of doughnuts.
Gather dough scraps & re-roll to cut out more doughnuts.
Whisk sugar & cinnamon in med. bowl to blend.
Set cinnamon-sugar aside.
Be sure oil is hot.
Working in batches, fry doughnuts until puffy but still pale, about 45 sec. per side.
Using slotted spoon, transfer doughnuts to paper towels to drain.
Cool slightly.
While doughnuts are still warm, add to bowl with cinnamon-sugar.
Generously coat each 2 times with cinnamon-sugar.
*Or pour cinnamon sugar mixture into brown paper bag.
Add doughnuts, one at a time, & shake in bag until coated to desired amount.
Serve warm.
