Kathy’s Zucchini Bread

List of Ingredients
2 C grated zucchini (no seeds), not packed
3 eggs
1 C oil
2 C sugar
2 tsp. vanilla
½ tsp. almond extract
8 oz. cream cheese
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1/2 tsp. nutmeg
2 C flour
Recipe
Preheat oven to 350.
In large bowl cream together eggs, sugar, oil, almond extract & vanilla until smooth.
Beat in cream cheese.
In large bowl, combine flour, baking soda, baking powder, cinnamon, salt & nutmeg.
On low speed, gradually beat into egg mixture.
Fold in zucchini & optional items below.
Pour into greased & floured pans.
Bake following the guidelines below and/or until knife comes out clean.
Allow to cool in pan 10 mins. on wire rack.
Remove from pans & allow to cool completely.
(Optional)
- 1 C chopped nuts
- Choice of 1 C raisins, chopped apricots, dried cherries, or cranberries
- 4 C fresh blueberries or 2 C frozen blueberries, thawed & drained
- 1 C semisweet chocolate chips (I used mini) & 1 tbsp. orange zest
Baking Times: 2 - 9x5 loaf pans = 60 mins.
7 - 5x3 mini loaf pans = 35 mins.
Cupcakes = 15 mins.
Bundt pan = 45 mins.
9x13 pan = 45 mins.
