    BLACK BOTTOM CUPCAKES

    List of Ingredients




    1 8 oz cream cheese
    1 egg
    1/3 cup sugar
    1/8 teaspoon salt
    1 small pkg chocolate morsels
    3 cups all purpose flour
    2 cups sugar
    1/2 cup cocoa
    2 teaspoons baking soda
    1 teaspoon salt
    2 cups water
    2/3 cup cooking oil
    2 tablespoons vinegar
    1 teaspoon vanilla

    Recipe



    In one bowl, cream cream cheese, egg, sugar and salt. Add chocolate morsels.
    In another bowl, sift together flour, sugar, coca, soda and salt. Add water, oil, vinegar and vanilla. Beat until well-mixed. Fill cupcake paper inserts 1/2 full with chocolate mixture. Put 1 teaspoon of cream cheese mixture on top. Can also put blanched almonds on top (I don't). Makes 2 dozen cupcakes. Bake at 350 for 30-35 minutes. I always make the small cupcakes. This recipe will make almost 5 dozen of the small cupcakes, but double the cream cheese filling when making the small ones. Bake at 350 for about 20 minutes. Making the small cupcakes takes a lot of time but they freeze well and are very good and moist.
