Chicken Enchalada's
List of Ingredients
4 boneless skinless chicken breasts
1 8oz pkg. cream cheese
1 lg can or 2 soup size cans of enchalada sauce
1 pkg corn or flour tortillas
1 small can green chili's(diced)
1 1/2 cups shredded cheese
Recipe
Grill chicken in a skillet. Turn heat down to medium after chicken is done. Chop chicken with a chopper or knife. Return meat to skillet and add cream cheese and 1/3 of the enchalada sauce. Stir in chili's. After cream cheese is melted remove from heat. Fill tortillas with a spoonful of mixture. Roll tortillas and place in a 13x9 baking dish. Make sure you leave the ends open on the tortillas as you roll them. If you wrap them like a buritto the tortillas will tear. When you're done with that pour remaing sauce on top of enchalada's. Top with shredded cheese and bake at 350 until cheese is melted!
