Smoked Salmon on Potato Crisps

List of Ingredients
- 1 Cup Sour Cream
- 1 tsp. dried hot pepper flakes
- 12 oz. smoked Salmon cut into 1-in squares
- 1/2 cup minced parsley
- 4 Idaho potatoes cut into circular slices
- 1/2 cup olive oil
- 1 tbsp. chopped fresh thyme
Instructions
- Preheat oven to 375. mix sour cream and pepper flakes, set aside.
- Toss Salmon and parsley and set aside.
- Toss potaotes with oil and place on baking sheet. Sprinkle with parsley, thyme, salt and pepper and bake for 8-10 minutes.
- Flip and cook another 5-8 minutes so both sides are golden.
- Let cool on rack.
Then assemble by placing a peice of Salmon on top followed by a dab of the sour cream.
