Spicy Texas BBQ Sauce

List of Ingredients
- 1 large yellow onion, thin sliced
- 2/3 roma tomatoes, halved
- 5 large cloves garlic, crushed & peeled
- 1/2 cup + 2 tbl oil
- 1 tbl black pepper
- 1 1/4 tsp salt
- 1 1/3 cups ketchup
- 1/2 cup cider vinegar
- 1/3 cup orange juice
- 1/3 cup light brown sugar
- 3 tbl white vinegar
- 2 tbl worchestershire sauce
- 1 tbl unsulfered molasses
- 1 tsp chili powder
- 1 tsp sweet paprika
- 1/8 tsp coriander
- 1/8 tsp cumin
Instructions
- Heat oven 375 degrees. Put onion, tomatoes and garlic on baking sheet. Drizzle with 2 tbl of oil, season with salt and pepper. Toss & coat vegetables. Spread in single later and roast for 30 minutes.
- Remove from oven and scrape into saucepan. Add remaining ingredients and bring to a boil over high heat. Reduce to low and simmer, uncovered, 2 hours, stirring occasionally, until thick enough to coat spoon back. Cool to room temp.
- Pour sauce into blender and puree, adding water if necessary to reach desired consistency.
