    Spicy Texas BBQ Sauce

    List of Ingredients


    • 1 large yellow onion, thin sliced
    • 2/3 roma tomatoes, halved
    • 5 large cloves garlic, crushed & peeled
    • 1/2 cup + 2 tbl oil
    • 1 tbl black pepper
    • 1 1/4 tsp salt
    • 1 1/3 cups ketchup
    • 1/2 cup cider vinegar
    • 1/3 cup orange juice
    • 1/3 cup light brown sugar
    • 3 tbl white vinegar
    • 2 tbl worchestershire sauce
    • 1 tbl unsulfered molasses
    • 1 tsp chili powder
    • 1 tsp sweet paprika
    • 1/8 tsp coriander
    • 1/8 tsp cumin


    Instructions


    1. Heat oven 375 degrees. Put onion, tomatoes and garlic on baking sheet. Drizzle with 2 tbl of oil, season with salt and pepper. Toss & coat vegetables. Spread in single later and roast for 30 minutes.
    2. Remove from oven and scrape into saucepan. Add remaining ingredients and bring to a boil over high heat. Reduce to low and simmer, uncovered, 2 hours, stirring occasionally, until thick enough to coat spoon back. Cool to room temp.
    3. Pour sauce into blender and puree, adding water if necessary to reach desired consistency.
