    List of Ingredients


    • 6 pound pork shoulder
    • 1 tsp Paprika
    • 1 tsp Thyme
    • 1 tsp salt
    • 1 tsp pepper
    • Garlic - 6-8 cloves
    • 1 cup water
    • 11 ounce can of chipotle chilies in adobo sauce
    • Onion - 1 small quartered
    • Lime Juice - 2 to 3 limes


    Instructions


    1. Combine everything, except pork in food processor.
    2. Cut pork into 3-4 inch pieces. Pour mix over pork in slow cooker. Cook on high for 1 hour, then low for ~11 hours.
    3. After 11 hours drain off liquid and save, shred pork with a couple forks. Let liquid stand and drain off as much fat as possible.
    4. Put pork back in slow cooker and add back liquid to desired consistency. Reheat for ~1 hour on low setting.
