List of Ingredients
- 6 pound pork shoulder
- 1 tsp Paprika
- 1 tsp Thyme
- 1 tsp salt
- 1 tsp pepper
- Garlic - 6-8 cloves
- 1 cup water
- 11 ounce can of chipotle chilies in adobo sauce
- Onion - 1 small quartered
- Lime Juice - 2 to 3 limes
Instructions
- Combine everything, except pork in food processor.
- Cut pork into 3-4 inch pieces. Pour mix over pork in slow cooker. Cook on high for 1 hour, then low for ~11 hours.
- After 11 hours drain off liquid and save, shred pork with a couple forks. Let liquid stand and drain off as much fat as possible.
- Put pork back in slow cooker and add back liquid to desired consistency. Reheat for ~1 hour on low setting.
