    Slow-Cooker Roast with Root Veggies

    List of Ingredients


    • 1 medium yellow onion, cut into eights
    • 5 medium carrots, peeled & halved lengthwise
    • 4 medium parsnips, peeled & quartered
    • 2 celery stalks, trimmed & halved lengthwise
    • 6 fresh sage leaves, chopped
    • 2 tsp kosher salt
    • 1 tsp black pepper
    • 1 tsp cumin
    • 1/2 tsp cayenne pepper
    • 1/2 tsp sweet paprika
    • 2 1/2 - 3 lb boneless chuck roast
    • 1 1/2 tbl oil
    • 4 cups low sodium broth


    Instructions


    1. Place vegetables and sage in bottom of crockpot.
    2. Combine salt, pepper, cumin, cayenne and paprika in bowl. Rub onto meat.
    3. Heat oil in large skillet over med-high. Sear meat until brown crust forms on all sides, 2-3 minutes per side.
    4. Transfer meat to slow cooker, ontop of veggies. Return skillet to heat, add 1 cup broth, simmer, stirring drippings for 1 minute. Pour over meat along with remaining broth.
    5. Cook low 8-hours.
