8 Sheets frozen phyllo @ room temp
8 tbl. butter, melted
1/2 Cup Sugar
1 ts. Cinnamon
4 Scoops Vanilla Ice Cream
4 peach halves
3/4 Cup raspberry sauceRecipe
1. Preheat oven to 450 degrees.
2. Lay a sheet of phyllo on a work surface, (cover the others with a damp towel) brush with butter. Sprinkle with sugar and cinnamon. Cover with another sheet of the phyllo. Repeat with 2 more sheets, making 2 4-sheet stacks.
3. Place on a parchment lined sheet. Bake for 5 minutes.
Cool. Break off small peice and crush. Place crumbs in each of 4 bowels. Top with ice cream, then press and peach halve cut side down into the ice cream.
4. Break off more peices of the phyllo, assemble around the ice cream and peaches.
