Bonless Leg of Lamb W/ Greek Sauce

- 2 Cup Water
- 2 1/2 Cup instant rice
- 1Tbsp. oil
- 4 Thin Cut Boneless leg of lamb steaks
- S&P
- 1 Seedless Cucumber, halved, sliced into half moons
- 1 Cup plain yogurt
- 1/2 Cup chopped fresh mint
Instructions
- Heat grill pan until very hot.
- Boil water in pot over high heat, season with salt. Add rice, stir, cover and turn off heat. Let stand five minutes.
- Coat lamb with Oil and season liberally. Grill
for about 2 minutes per side. Remove and rest.
- Combine cucumber, yogurt and mint. Season with salt and pepper.
- Fluff rice and plate. Top with sauce then lamb.
