Citrus-Infused Salmon

List of Ingredients
- 3 Tbsp Cinnamon Chipotle Rub (McCormick)
- 2 tsp grated lime zest
- 1 tsp ground cumin
- 1 whole salmon fillet (about 2 1/2 lbs)
- 3/4 cup (6 oz) pineapple or orange juice
- 2 Tbsp lime juice
- Garnish with pineapple and lime slices and fresh pineapple leaves
Instructions
- Mix rub, zest & cumin in a small bowl.
- Put salmon in a large glass baking dish or zip top bag. Add juices, cover and seal. Marinate 15 minutes at room temperature.
- Heat oven to 450. line a baking sheet with foil. Place salmon, skin side down on the foil, discard the marinade. Evenly sprinkle the spice mixture over the salmon.
- Bake 15-20 minutes until opaque at the thickest part. Lift with 2 large spatulas to a serving platter, leaving the skin behind.
